1 Ingredients for potato filling
4 large potatos peeled and chopped
half cup of green peas (boilled or frozen)
2 tablespoons of oil or ghee
1 teaspoon of cumin seeds
half a teaspoon of fennel seeds
1 table(spoon) of grated ginger
1-2 green chillies finely chopped ( adjust to taste )
1 teaspoon of ground coriander
3 quarter teaspoon of chili powder
1 teaspoon of garam masala
1 teaspoon of amcher (dry mango powder) or half a teaspoon of lemon juice
salt to taste
2 tablespoons chopped cilantro (fresh coriander leaves)
1 medium onion finely chopped (optional)
1 quarter teaspoon of hing (asafoetida) (optional)
Instructions for potato filling
boil the peeled and chopped potatoes in salted water until fork-tender then drain and roughly smash them.
heat oil or ghee in a pan or kadai (wok) add the cumin seeds and fennel seeds and let them splutter
add the ginger, green chillies , and optional hing and saute for a few seconds until fragrant.
stir in the green peas and saute for 1-2 minutes. add the red chili powder, garam masala, cumin powder, amchur, and salt, and saute for 30 seconds
add the smashed potatoes and mix well, then saute for 2-3 minutes, combining everything thoroughly with the spices
remove from heat, stir in the chopped cilantro, and let the mixture cool completly before using.
taste and adjust salt or amchur to your preference.
